Chocolate Chip Scones

As we reach almost a year of a home bound lifestyle due to Covid I’m baking my way through the days. Scones are one of my favorite indulgences because they aren’t overly sweet. Dunk them in coffee or milk and it’s heaven.

RECIPE-2 1/2 cups flour, 1 tsp cream of tartar, 1/2 tsp baking soda, 1/2 tsp salt, 1/4 c sugar, 3 TBSP applesauce, 2 TBSP coffee, 2 TBSP water, 1/2 cup milk, 1 cup chocolate chip cookies, powered sugar to sprinkle on top. Preheat oven to 375 degrees.

I used my Kitchen Aid mixer to whip up the batter. If you’ve ever wondered if they are worth the investment my answer is YES. Mine is over 20 years old and works perfectly.

Scoop the dough out onto a floured surface.

Roll out with a rolling pin.

I use a pizza cutter to cut ours like pieces of pizza. You can cut them into squares or even drop onto the cookie sheet in balls. I like to dunk so the pizza shape is my preference.

Bake for 15 minutes. Sprinkle lightly with powdered sugar before and after baking.
